Christmas Day.

I slept in this morning. Unusual for Christmas, but I’m still tired over the move. Luckily, since it’s winter break and with the exception of the days when I volunteer at the hospital, I can catch up on some much needed sleep.

We opened presents after breakfast. Presents on Christmas morning brings back memories of my childhood. One of the many reasons as to why I love this holiday.

After opening presents, we spent most of the day baking and preparing our Christmas dinner. We had tofukey with two gravies (a traditional American one and a Chinese-inspired one) and a veggie side of roasted eggplant, sweet potatoes, and green beans. My non-vegan brother even ate the tofurkey (turning down the meat option!)

We also baked a pumpkin pie. I love the creativity that baking allows. I decided to make our pie more Christmas-y by making gingerbread men cut outs with the pie crust dough and putting it on top of the pie…
