Raw truffles and Banana bread.

One of the foods that I’ve missed the most since going vegan is chocolate truffles. Truffles remind me especially of Christmas because my brother and I would always buy two boxes of Hershey’s Pot of Gold for my sister as “medium” gifts. On Christmas Day, after we’d all opened our presents, she’d share some of the Pot of Gold with us.

Anyways, today we made some raw truffles.

Ingredients: soft Deglet noor dates, raw cacao powder, lacuma powder, maca powder, agave syrup, water.

As with most raw foods, the preparation was very simple. We pretty much blended everything in a food processor until all of the ingredients were mixed together. We then shaped our truffles. We rolled some of the truffles in cacao nibs and dipped others in cacao powder.

BEST TRUFFLES EVER. No truffles can compare— not even the non-raw vegan ones. The raw cocao powder, maca, and lacuma are all superfoods btw. So they’re yummy and good for you.

We also made banana bread.

Ingredients: whole wheat flour, ripe bananas, cane sugar, muscovado sugar, olive oil, soy milk, baking soda, and salt.

We made two loaves of banana bread: one mini loaf and a mini-mini loaf.

OK- back to studying for my two midterms. Three more days of studying and five more days until the Green Festival!
