Mapo Tofu.
The last thing we made on Monday was Mapo tofu (one of my favorite Chinese dishes). Ingredients: silken tofu, chopped mushrooms, onions, soy sauce, rice vinegar, water, tapioca starch, and sriracha hot sauce. The chopped mushrooms served as the “minced meat” that usually goes in Mapo tofu. DELICIOUS over steaming brown rice on a cool winter day.

Pizza and Cinnamon Rolls!
All in one Monday afternoon. First, the pizza. We used both cheddar and mozzarella this time; along with sliced mushrooms, red bell peppers, and yellow onions. Next, we made the cinnamon rolls: We gobbled up four of these suckers within minutes. It’s OK. We went for a 2-hour walk after wards to exercise off the pizza and cinnamon rolls. :)
